Description of wine:
We picked the grapes for this wine at the very end of the harvest and they were lovely and ripe thanks to the noble rot Botrytis Cinereathat concentrated the aromatics within the grapes, the taste, sugar levels and acidity. The very high extract bears witness to the quality of the grapes, which reached a level of 34.5 grams/litre. Fermentation was not halted, the wine fermented out spontaneously to its own level. The aromatic side draws attention with tones of citrus fruit and apricots, the mouth fills with refreshing mineral flavours terminating with its naturally juicy acidity. The wine lay in large untoasted oak barrels for 6 months.
